Rice & Beans

Rice and beans are the base ingredients of most all meals in Belize.  Staying true to the traditions of our current home and to our personal preference – no matter what the location, we have been eating rice and beans, or at least one of the two, for practically every meal.

After almost a month of joking about doing a photo series to include every meal called “1001 Rice & Beans” I have finally decided to take this seriously and create this page to document the many variations we concoct from this simple, often seen as pauper, base.  Although some of the meals do not include rice or beans, that is quite rare.

  • Refried Beans (Salt, Pepper, Coconut Oil, Cilantro, Refried Beans)
  • Breadfruit Fries
  • Corn Tortillas
  • Orange Juice

Dinner

  • Coconut Brown Rice w/ Paprika & Basil
  • Sautéed Vegetables (Zucchini, Bok Choi, Green Pepper, Habeñero, Onion, Garlic, Salt, Pepper, Coconut Oil)
  • Fried Corn Tortilla Strips
  • Coconut Rum w/ Sprite & lime

  • Scrambled Eggs & Pacaya (Chib in Maya – with onion, garlic, cilantro, salt, pepper, coconut oil)
  • Orange Juice

  • Scrambled Eggs w/ Zucchini, Red Potato, Dried Poblano Pepper, Onion, Garlic, Paprika, Coconut Oil
